Yeasts or yeast organisms are a heterogenic group of fungi which is very difficult to define. During the vegetation period they are dominant on the leaf surface and their biomass outweighs the biomass of other microorganisms. The following characteristics are considered as their priorities: morphological adaptation to the environment, tolerance to air pollution as well as substances produced by plants against phytopathogens. On the one hand they cause a wide range of diseases (e.g. in Vitis vinifera), on the other hand they can serve as indicators of air quality (Sporobolomyces) or protect against fungus diseases.
